September 18, 2024 Beef Meatballs in Dijon Gravy, Steamed Broccoli with Onions, Green Salad, Rice

There are so many ways to make meatballs.  You can use any kind of ground meat.  Sauce recipes are abundant.  I chose what was called Dijon Gravy.  Really it was just a Salisbury steak sauce plain and simple.

The recipe said to cook the meatballs in a pan on the stove.  I chose to cook them in the oven at 350° for about 25 minutes.  They came out really good, browned on all sides and much less messy then cooking them in a frying pan.

The recipe didn’t call for mushrooms but I added them anyway.  The gravy was good although I had to add an extra teaspoon of Dijon mustard to up the flavor.

Matsu always steamed broccoli with sliced onions.  The family acted like it was the first time they had eaten steamed onions.  They really liked them.  It’s my favorite way to cook broccoli, prefer it much better than roasted.

It was a calm relaxed evening.  So lovely when all four of us can be together and share a meal.  It’s working out well for me to be with them on Sunday and Wednesday’s. 

I do get to see Apollo Monday, Tuesday and Thursday afternoons when I drive him to swim team practice at 4:30.  Don’t know how long that will last.  Things will change again when High School swim season begins.  Oh well, we’ll adjust, we always do.

By the way, I cheated in making the green salad.  I bought already chopped up lettuce and arugula at Whole Foods at the cold food bar.  No one noticed, and it was really fresh and good.  Score one for me!
