October 23, 2024 Beef with Sweet Potatoes, Tennessee Onions

There are always a lot of sweet potatoes from the Farm Share this time of year.  I knew it would be a good idea to find a recipe that would use them. 

Beef with Sweet Potatoes was perfect.  I used 4 sweet potatoes and a pound of hamburger.  It turned out to be not only really tasty but also economical.  I am way over budget this month due to extra expenses caused by Michelle’s stay in the hospital.  There were parking fees, extra meals eaten out.  I try to not spend more than I take in each month so that my bank account stays even.  Not so this month.  Oh well, it was necessary.  No worries, I have resources I can draw from.

The recipe also called for Taco Seasoning and a can of tomatoes.  When I served it, the family really liked it and decided that it was Tacos with sweet potatoes rather than tortillas.

Lately Michelle has been asking me where I get my recipes.  It isn’t enough to just say Pinterest.  She wants to know.  This recipe comes from Claire Hodgkins.

I’ve seen several recipes for onions, just onions by themselves.  It made me curious.  This recipe for Tennessee Onions from Southern Living sounded really good, I decided to try it.  Also economical, sweet onions are inexpensive.  The recipe also called for cheddar cheese and smoked gouda.  I had the cheddar already so only needed to buy the gouda.  It was a hit!  Turned out really good.  Will do this one again.  Will also try other onion casserole recipes too.
