Michelle has been very sick. Last Wednesday the 9th she was in the hospital. She was in the operating room for six hours getting an ablation to her heart because she had been having irregular heart beats. There were complication I don’t need to go in to but needless to say I did not cook that night, no one did. I stayed at the hospital until late. John stayed all night. They kept her an extra night because of the complications.
What we learned is that not only was she experiencing PVC’s (extra heart beats) she also has Pericarditis. The main symptoms are fluid around the heart and inflammation.
I read somewhere that turmeric reduces inflammation. Sunday I made Turmeric Tea for her. I used coconut milk and spices. It was delicious and very soothing.
So Wednesday, I made Turmeric Chicken Soup for her. I used 1 and one half cartons of vegetable broth and 1 can of full fat coconut milk. First I sautéed lots of vegetables. A leek, a red pepper, onion, celery and at the end of cooking I added a bag of peas. Next I put in all the spices. Then I added the broth and chicken thighs. Let it boil to cook the chicken. When the chicken was done, I took each one out and shredded it. Much easier than cutting it up ahead of time. Last I added the peas.
It was delicious. The family liked it. I was glad I made it. When a loved one is sick, it’s so common to feel helpless, unable to help the person feel better. Well, chicken soup is an age old cure for whatever ails you. I felt better by contributing this delicious, nutritious chicken soup.
By the way, Michelle is better. Day by day a little improvement. Most likely due to the medication she is receiving. But I like to think my Turmeric Tea and Turmeric Chicken Soup also helped.
