November 5, 2024 Cabbage and Ground Beef Squares, Peas and Mushrooms with Fresh Tarragon

Michelle informed me early in the week that she had a gigantic head of cabbage taking up the entire vegetable drawer in the fridge.  There are so many delicious ways to use cabbage, it was not easy to decide what to do with it.

She also informed me that she had three bags of green peas in the freezer.  What fun.  I love green peas and you can be quite creative with preparing them to eat.

I chose a recipe using ground beef and shredded cabbage.  Thie recipe comes from Yummyfully.com.  The seasonings were paprika, turmeric and oregano.  You mix it all together like you’re making a meatloaf.  Then spread it out in a baking dish.  It only took 30 minutes to cook in a 425° oven.  After it was cooked I took it out and spread shredded cheddar and smoked gouda on top and put it back in the over for 15 minutes for the cheese to melt.  Turned out good, family liked it.

The peas and mushrooms also turned out good.  I splurged on fresh tarragon.  Turns out Michelle loves fresh tarragon.  I didn’t know that ahead of time.  Lucky choice. 

Everyone was home this evening.  So lovely when all four of us can be together.
