June 22 2025 Oliver Chicken Salad, Corn on the Cob

I didn’t cook on Wednesday May 18 because no one was home except John. Apollo was working and Michelle had a work meeting. I know I could have made something for John but he is very capable in the kitchen and I thought it’s just nice to have a quiet evening by yourself once in awhile.

This was not a regular day for me to cook.  The reason why is because the family, including Sasha who is home for a few days, went on a hiking trip to Shenandoah VA the day before.  I knew they would be hungry and tired when they got home on Sunday evening. I offered to have something ready to eat so they would not have to cook. 

The Oliver Chicken Salad comes from the Joon Persian Cookbook.  Yes, the title in the cookbook does say Oliver, not olive.  It has lots of good stuff in it.  I sauteed onions and chicken cut up in small pieces.  Then at the end added a whole bag of frozen organic green peas.

It also called for Russet potatoes.  The recipe said to boil them.  I didn’t think that was such a good idea so I roasted them in the air fryer.  Much better in my opinion.

The veggies were carrots (the recipe said to cook them, but I didn’t.  I wanted them to be crisp), celery, and parsley.  Then lots of olives!

I also hardboiled three eggs to add to the mixture.

The dressing was a Greek yogurt base with Dijon mustard, rice vinegar, and freshly squeezed lime juice.  I thought it was a little too bland so I added some cumin and harissa pepper.

By the time I had it all combined in the biggest bowl they have the salad must have weighed ten pounds.  It was a lot.  And I did not double any of the ingredients.

Sasha requested corn on the cob.  They like their corn barely cooked.  I waited until they had all had their showers and were ready to eat before I tossed the corn into the boiling water.

The meal was a great success.  The salad was a hit!  Everyone enjoyed it.  It was so nice to sit down to Sunday dinner with everyone home.   

Very successful weekend.  It’s great to have Sasha home for a few days.  They had a lot to say about the hike, apparently lots of climbing involved, something they all enjoyed.  We talked about how John used to take the kids to the climbing gym and what fun it was.
