What I did was collect all the ingredients for the summer rolls, rice paper, shrimp sliced in half, carrots and cucumber sliced thin, and rice noodles. Then Apollo assembled them. It was easy for him to do and they turned out really good. I don’t usually get help from the family but this was a fun project so he volunteered. I had him watch a video first to see how it’s done, then he made 10 of them in no time.
I tried an experiment with roasting the broccoli. I read somewhere that the best way to do it is to roast the broccoli first, then when they’re done add the olive oil. So I tried it. Disaster! It was awful. It did not turn out well at all. Will never do that again. Douse them with olive oil first then roast them. That’s best. To tell the truth, I prefer my broccoli steamed rather than roasted. That’s what I’ll do next time.
The chicken with sweet chili was really easy, just cut up chicken thighs, cook them in a pan and then dump the sauce on top. I did make my own chili sauce. It was easy.
