
Dinner had a Greek theme this week. The Greek Beef Skillet was a stir fry that had spinach, feta cheese, kalamata olives, and fresh dill, mint, parsley, and oregano. I do try to mix different seasonings and ingredients to ordinary ground beef stir fries just to keep it interesting and not fall into a rut of doing the same ingredients and seasonings every time. I also tried a different take on potato salad. This one did not use mayonnaise. I added the salad dressing which was just olive oil, red wine vinegar, fresh lemon juice and zest, and garlic when the potatoes were still hot so they absorbed the flavors. It worked. It also had red onion, green onions, kalamata olives, capers, and fresh dill. It went well with the Greek beef skillet. I got this recipe from The Mediterranean Dish. I follow Suzy Karadsheh. She is one of my very favorites.
I know, naan is not Greek, but we like it better than pita bread. Altogether this menu worked well. Everyone was happy.
