July 2 2025 The Most Awesome Pork Tenderloin Ever, Vegetable Spring Rolls with Garlic Chili Sauce, Rice

I planned this meal thinking about Apollo.  Michelle said how much food he needs these days due to his swim team practices and life guarding work.

But then he didn’t show up because he was out with friends.  And!  He missed swim team practice yesterday because he had to work at the pool.

Oh well.  He can have leftovers for lunch tomorrow.

It was just Michelle and I at the dinner table tonight.  John is in California attending a conference, Sasha has gone back to Chicago.

But, we do love this pork tenderloin recipe.  It comes from Diva di Cucina.  I like it because pork tenderloin tends to be less expensive than beef, it’s very easy and extremely delicious.  Just put the pork in a 9 by 13 baking dish, pour the sauce over it and put it in a 350° over.  I set the timer for every 10 minutes while it’s cooking to baste it.  Only takes about 30 minutes to cook.

The sauce is a bit sweet and sour.  It has garlic, Dijon mustard, soy sauce, honey, orange juice, and fresh rosemary from the garden.  And of course olive oil.  Which I think I forgot last night but never mind, it turned out good anyway.

I had a package of rice papers opened and I wanted to use them.  So I chopped vegetables thinly and we rolled them up in the dampened papers.  I used red peppers, cucumbers, cabbage, celery, a fresh basil leaf, and a lettuce leaf.  Michelle made up a dipping sauce using garlic chili sauce, rice vinegar, and toasted sesame oil.  It was not too spicy, I liked it.

We enjoyed our quiet evening together, sitting outside, sipping a glass of wine with our dinner.  She told me about how much she has been enjoying her week alone with just Apollo at home. She had a funny story about a bird that was sitting outside her office window chirping constantly all day.  She got out Apollo’s giant squirt gun and shot at it with water because it was driving her crazy!
