January 15 2025 Homemade Shake and Bake Port Chops, Japanese Spinach Salad, Rice, Parmesan Brussel Sprouts

I have not cooked in several weeks because I didn’t need to during the holidays.  John’s parents were here for two weeks.  They went home then John’s sister, her husband and 2 of their kids came for New Years.

I bought a large package of pork chops at Costco last weekend.  I suggested to Michelle I could get a package of shake and bake to cook them.  She said don’t use store bought, make your own.  That way not so much salt and preservatives.  It was easy to find a recipe.  There were lots of them.  I chose the one from Modern Eats Farmhouse. 

We liked it, very tasty.  There was more than I needed so I froze the extra to use another time.

The Japanese Spinach Salad was also very good.  I blanched the spinach then added the dressing so it’s a wilted spinach salad like you get in a Japanese restaurant.

We liked the Parmesan Brussel sprouts so much the last time I cooked them I decided to do it again.  Family ate them all.
