I probably cooked too much food this week. But dinner was much better this time than last week. The feta spinach loaf was interesting. I didn’t have buttermilk so I used Greek yogurt. I didn’t think it was liquid enough so I added some cream, enough so I could incorporate the spinach. The spinach is wilted first, not raw. Otherwise it would be too much in volume for the rest of the ingredients to be able to mix it in. It was interesting. I liked it.
Apollo really liked the broccoli with orzo. It was creamy too, with cream and mozerella cheese sauce. Yum.
John made gravy from the sauce on the pork. Yum, really good. I’ve made this pork tenderloin recipe before and we liked it. I always cook 2 of them because it goes quick, almost no leftovers.
