December 4, 2024 Black Bean Sweet Potato Casserole, Garlic Parmesan Roasted Brussels Sprouts, Chicken Meat Balls

I feel so sad as I write this one – they did not tell me ahead of time that Apollo had swim team practice at 6:00.  He usually does not have practice on Wednesday’s.  This is an optional practice he chose to go to. So I didn’t know and was not prepared.

I went over early and got everything prepped and ready to go.  I had it sitting on top the stove thinking of putting in the oven at 5:00 to be ready to eat at 6.  Apollo came home at 5.  He walked into the kitchen, eyes bright, hungry and wanting to sit down to eat right then!  When he saw that the food wasn’t cooked yet his face fell.  So did my heart – I felt so bad.  If I’d known he needed to eat at 5 I could have had it ready – but I didn’t know.

He assured me it was okay.  There were leftovers in the fridge to warm up and he made due with that.  I did go ahead and cook the casserole and sprouts.  Michelle, John and I did enjoy our meal.
