December 11 2024 Pasta with Walnut Sauce and Swiss Chard, Broccoli Cauliflower Soup, Perfect Pea Salad

I checked ahead of time today to make sure everyone would be home.  No swim team practice tonight, dinner at 6.

I spent a couple hours at the Bala Cynwyd Library while my car was being serviced.  Do you know how many  cookbooks they have at that library?  The cookbook section is HUGE! 

I ckecked out Milkstreet Tuesday Nights Mediterranean Cookbook by Christopher Kimball.  I thought the recipe for Walnut Sauce sounded good so I chose that one.  I like walnuts so I’m always interested in recipes that use them.  IT WAS AWFUL.  MISTAKE!  It was very bland, almost tasteless.  I used kale because I didn’t have any swiss chard – next time I’ll leave it out, it added nothing to the dish.  Apollo ate it anyway because of the spaghetti noodles.  John told me later.  I that raw walnuts are his least favorite food.  It was a mistake.  It I ever do try this one again I will definitely toast the walnuts first.

I like to use vegetable broth in soups.  I think it has more flavor than chicken or beef broth.  The vegetable soup was hearty and good on a cold evening.

Pea salad of any kind is one of my favorite foods.  I had a small piece of spiral ham I bought at Trader Joe’s that I wanted to use.  For the dressing I used 1/3 cup mayo and 2/3 cup sour cream and 2 teaspoons vinegar.  I sauteed the ham and onions, added the frozen peas to thaw them.  When cooled I added the dressing and sharp cheddar cheese cut into small cubes.  I was really happy with how it turned out.
