Thoughts On Cooking For My Family

May 9, 2024 Chickpea Salad Melts (vegetarian tuna melts), the Best Thai Coconut Soup with Shrimp, and a green salad.

Another effort to include chickpeas in a different way. Wow! They were great! The family loved them.

On the advice of John I toasted the bread in the toaster before I buttered the outside of the top and bottom and filled them with the chickpea mixture. The mixture included dill pickles, red onion, dijon mustard and so on. I added a sprinkle of chili flakes just to liven it up a bit. Also, it called for lemon juice, I used pickle juice instead. Topped it off with a slice of cheese, put the top bread on and put them in the air fryer. Very easy and delicious. Another successful experiment.

Again I wanted to make sure there was enough protein in the meal so I made the Thai Soup with shrimp. So easy and another family favorite.

Don’t tell anyone but my least favorite item to prepare is a green salad. Maybe it’s because growing up this task was always assigned to me. Enough! I believe that by the time you’re a grandmother you can be excused from the green salad making chore. But I made an exception and did make a green salad which we all enjoyed. We almost always use a basic homemade vinaigrette dressing.
