August 8 2024 Old Fashioned Meatloaf and Salad

Drove to Philadelphia Airport this morning to pick up Sasha, just getting back from her orientation week at UC Berkeley.  Then, dropped her off at home and drove up to Newark, NJ to pick up Michelle and John getting back from their vacation in Seattle, and Apollo getting home from his week at camp in Costa Rica.

What a day.  Everyone getting home on the same day.  With everyone coming home from different places I had no idea what everyone’s food requirements would be.  So, I decided the day before to make a great big old-fashioned meatloaf and a salad to have on hand.  Meatloaf is always good comfort food for people to snack on when they feel hungry and there was enough to tide them all over for a day or two until they can adjust to being home.

It worked out really well.  Everyone like it and appreciated having sometime good to eat without having to do the shopping and preparation themselves.
