August 6 2025 Potato Salad

No cooking for family this summer.  Everyone is so busy.  Apollo was at music camp in Vermont for 2 weeks.  Michelle and John went hiking in Acadia Park in Maine.  Then it’s been so hot, really too hot to cook. 

Now that Apollo is home from camp he has a job now lifeguarding at Belmont Hills Pool until it closes in September so he’s seldom home in the evening.

So I’ve been cooking for myself!  I don’t need much.  My needs are minimal.  I don’t count calories, my goal is to have at least one serving of all food groups every day.  That means at least one vegetable, one fruit, and one whole grain.  But protein at every meal if possible.  Three meals and one snack in the afternoon is about it for me.

I love home made potato salad in the summer.  I don’t follow a recipe, I just put whatever I have in it.

This time I used 2 Yukon potatoes, unpeeled, and 2 hard boiled eggs.

The the dressing I used Avocado mayonnaise and Greek yogurt.  When I peeled the eggs I put the yolks in with the dressing.  It makes it really rich.

For a little kick I use Dijon mustard and dill pickle relish.  Not the sweetened kind.  That’s about it.  I don’t measure.  Besides the eggs and potatoes everything else is just to taste.

It lasted a couple days and I was really happy with it.
