Michelle purchased 2 packages of chicken drumsticks before she left to take Sasha to California. When I suggested to Apollo that I cook them for dinner when his Mom and Dad got home on Sunday evening we got excited. He said he had a recipe for a marinade that he really liked. It was olive oil, garlic, and lemon juice. Good idea! I defrosted the chicken overnight then set it to soak in the marinade Sunday morning.
There was fresh corn on the cob from the Share. I cooked it and cut it from the cob and baked a corn casserole. Delicious. I found the recipe for this on Pinterest. It’s by The Kitchen Whisperer.
The edamame salad was easy. I used fresh herbs from the garden and a simple vinaigrette dressing. Threw in cucumbers and tomatoes from the garden. Yum.
I picked up Michelle and John at the airport early in the evening. John and Apollo barbequed the chicken when we got home. They liked the corn casserole and the chicken was delicious. It was a happy homecoming celebration.
