Very simple meal this evening. I made a casserole with grated zucchini and chopped onion, two eggs, bread crumbs. For seasoning I used fresh dill. It was very simple. It’s like one of those recipes you see on internet where the guy throws a few things into a baking dish, mix it, cheese it, and bake it. I love those recipes. I think for him it’s one meal but for me I can get 2 dinners and a lunch from a recipe like this. Try it!
I have begun experimenting with making chia seed pudding. This time I used zest and juice of a lemon, 4 tablespoons of chia seeds, a cup of almond milk and a tablespoon or so of honey. Let it gel in the fridge overnight. I liked it. I will do more different kinds to see which one I like best.
