There was another recipe I made several times that used black beans instead of ground beef. We liked it with beans but this time I chose to make it with ground beef. I roasted the sweet potatoes for about 15 minutes ahead of time because the last time they took a long time to cook in the casserole.
It called for taco seasoning. I bought a mix but Michelle happened to walk by and see the envelope and read the ingredients. Oops, not good. It had stuff in it she disapproves of. So she pulled out spices for me to use instead. I was afraid of making it too spicy for me so I used them very sparingly. Consequently, the casserole turned out rather bland. Oh well, Apollo said he liked it.
The zucchini and corn was good. It’s just sauteed zucchini and frozen corn with basil, oregano, and thyme. I didn’t have fresh herbs so I used dried. When the zucchini was done I ladled it all into a bowl and added parmesan. Then let it cool so it really was a more like a salad. I’ll do that one again.
Apollo was home for a change this evening. But John was not. So it was Michelle, Apollo and I at the dinner table. We missed John but enjoyed our meal sitting outdoors on the patio.
