I had fun today. Nothing on my calendar so had all day to think about, plan, shop and cook.
I knew I wanted to make the roasted cauliflower sweet potato salad and the oatmeal/apple/carrot cake but I couldn’t decide on a main dish. I spent a couple hours looking at recipes and nothing seemed to fit. Finally decided on meatballs.
I saw that there were several sweet potatoes in their kitchen. We like curry seasoning and also cauliflower. This recipe seemed to be a perfect combination. I made my own curry spice so that it would not be too spicy for me, didn’t use any hot pepper spices at all. It not only has curry seasoning but also tahini dressing. The family had chicken for dinner last night so I wanted to do something different. So often we get stuck in a rut, having the same type of protein over and over again. I believe it’s better to vary what we eat. It helps to ensure we’re getting a better balance and all the nutrients that we need.
So I chose ground pork just for a change. I really liked the sauce that came with the recipe. It uses toasted Sesame Oil, Chile Garlic Sauce, fresh ginger and garlic, honey, and a little corn starch to thicken it. I just made it in a sauce pan by itself and we each added it individually to our meatballs. I think next time I will triple the sauce recipe, make it in the cast iron frying pan, and put the roasted meatballs in it so they get fully coated. The Oatmeal/Apple/Carrot cake also had raisins and chopped dried apricots. No sugar or sweetener at all. Interesting, but not at all sweet. I think it would be good as a breakfast type cake than for a dessert. This recipe comes from Tasty Soul Food Recipes.
It was just Michelle, John, and I at the dinner table this evening. Apollo was at swim team practice. He’s so hungry when he gets out of practice that whoever goes to pick him up takes a plate of food for him to eat in the car on the way home.
Last week was spring break in Lower Merion School District. All four of us went to Berkeley CA to visit Sasha. We stayed in a very cute and comfortable AirBNB house. I am so happy I got to see the UC Berkeley campus. Wonderful also to see Sasha. She’s thriving in her first year of college.
