I saw the recipe for the ravioli soup and it looked so yummy I decided to try it. It called for a cup of heavy cream but I used a can of coconut cream instead. It was a hit. We all liked it. Broth was delicious and of course we liked the ravioli. We haven’t had ravioli in quite awhile so it was good for a change.
I just blanched the green beans, then added Vidalia onion and feta cheese. It called for a lemon vinaigrette dressing but I used out regular vinegar dressing. It was really good.
Then I just made up a recipe for the pear/beet/goat cheese salad. I used the already cooked beets from Trader Joe’s, 2 pears, and goat cheese. For this one I used a lemon dressing. Also for the greens I used a mixture of baby spinach and arugula. I liked it better than just all arugula. The goat cheese kind of melted and became part of the dressing. It worked.
The Jello dessert was just for fun. I found an antique recipe book called Fun With Jello. I showed it to the family just for a laugh. Before I gave it away I decided to use one of the recipes. The one I chose called for 1 box of strawberry Jello and 1 cup strawberry yogurt (I used Yoplait). I made the jello and put it in the fridge to harden. Then I added the yogurt and beat it with the mixer. Ha ha! Michelle and John took a couple bites and set it aside. Too sweet for their taste. I ate all of mine, and Apollo loved it! Oh well. I don’t think I’ll do another Jello recipe ever again.
