This time I did use a recipe. The one I used came from liveeatlearn.com.
Basically to start with you make a white sauce using 2 cups of vegetable broth instead of milk. It called for 2 cans of chickpeas but that’s too much for me. I used 1 can of chickpeas and a half a cup of ditalini pasta to absorb some of liquid.
The lemon pepper is the actual lemon pepper spice which I happen to have on my spice rack. Don’t use it very often so happy to find a recipe that calls for it.
I made the sauce first, then dumped in the chickpeas and pasta and let it simmer a bit. At the end I added a cup of half and half and the juice of one lemon.
When I scooped a serving into a bowl I added some parmesan cheese. Yum. Very filling and satisfying meal.
Next time I could add a vegetable like spinach of cabbage or whatever I have on hand.
