Let me start by talking about this week’s menu. I made Broccoli with Garlic Sauce, Hot Honey Parmesan Carrots, and Bok Choy Chicken. I also made Chickpea Meatless Loaf. This was an experiment. I’ve been wanting to eat more chickpeas so each week I’m trying out something a little different other than making hummus or just dumping a can into a soup or stew.
It all turned out really good. The Bok Choy Chicken was really easy. Basically just cut the chicken up, marinate it in a corn starch slurry, cook it in a pan, add the bok choy and a sauce included in the recipe. It is not my intention to give recipes. All these recipes I found on Pinterest. They’re easy to find. My intention is to talk about the menus, how things turned out and how the dishes were accepted by the family.
I must say that my family, daughter Michelle, son-in-law John, and 2 teen-age grandchildren Sasha and Apollo, are all good sports. I almost always cook something different each week that I have never made before. Most of the time this turns out well, and sometimes not. No one has ever complained. Of course, I don’t know what happens to the leftovers after I’ve gone home.
I love to experiment with new recipes. Sometimes I will do a repeat of something that was particularly well liked. I usually print out the chosen recipe and make notes on it in case I want to make it again. But not always. Sometimes I do not print them out and just make my notes directly in Pinterest.
I look at Pinterest almost every morning to see what’s going on. I have so many saved recipes I could make something different every day for the rest of my life and never try them all. Oh well. I enjoy finding and reading recipes almost as much as I do cooking and eating them.
