I have never made a dish using tortellini pasta. So today is the day. This one looked like a good one because it included tortellini, beef, garlic and a green leafy vegetable. All foods that we like. The recipe called for spinach but I used kale because there was a lot of it in the fridge. I sauteed it separately before I added it to the skillet so it could cook down a bit. It takes longer than spinach does to wilt. Later I realized I forgot to add the butter. Oh well, it was still tasty.
The salad was a hit! John was humming when he took a bite. I liked it because of the different combination of ingredients. I cooked the garbanzo beans in a skillet covered with dried harissa powder which gave them a really interesting flavor. Then besides all the salad vegetables I added chopped green olives, and chopped dates! Just a simple lemon olive oil dressing, fresh herbs basil and thyme from the garden. Wow. Interesting combination that came together very well.
This was an early dinner and all three of us were there. Tonight is the Lower Merian High School Orchestra Concert at 7.
