March 12 2025 Chicken and Leek Pie With Brie, Quick Orzo Vegetable Soup, Savoy Cabbage Salad

I remembered to set the puff pastry out to thaw the night before so it was ready to use.  This is a simple dish to make.  It’s a bit of a misnomer because I did not have leeks or brie.  I substituted shallots and gruyere cheese.  It was easy and really good.  This recipe comes from Almonds to Zest website.

I put the orzo in the soup too soon so it absorbed most of the broth by the time we were ready to sit down to eat.

Everyone really liked the chicken pie.  I’ll definitely make this one again.

The cabbage salad was different this time because I used a different vinegar.  But still good.  I used a full bag of peas and corn – maybe too much.  Next time will use less and add more cabbage.
