September 25 Miso Chicken with Mushrooms and Pea Pods, Farro Apple Waldorf Salad, Rice

The Miso Chicken turned out really good.  The recipe called for both sugar snap peas and pea pods.  I did both but was sorry I did because it was too much.  Next time I’ll only use the pea pods.  They were the best part.  I don’t know where I got the recipe for this, can’t find it now.  Oh well, there are lots and lots more recipes using Miso. 

The reason I did this is because I wanted to use Trader Joe’s Yuzu Miso.  I read good reviews about it wanted to give it a try.  It is really delicious.  Since then I’ve been using it to make salad dressing, and I love it.

We have been eating more Farro lately.  Michelle likes it as an alternative to white rice.  It has more fiber and besides it tastes good.  The Farro Apple Waldorf Salad was a hit.  Everyone liked it.

I included rice also just because Apollo needs to eat so much these days that he is growing and also going to swim team practice every day.  He needs lots of fuel.
