It was just Michelle, John, and I for dinner this evening. Michelle has 3 basil plants growing in her garden. I wanted to cook something using the fresh basil and found a recipe for Thai Basil Chicken Meatballs. The zucchini fries were a request from Michelle. They had several zucchinis in their fridge they wanted to use up before they leave on their trip to take Sasha to school in Berkeley, CA. They leave tomorrow and will be gone a week.
The meatballs were really good but I didn’t like the sauce. It was too salty, too much soy. If I make this recipe again, I’ll use a different sauce. The basil is incorporated into the meatballs themselves, not just in the sauce.
I cooked the zucchini with a parmesan panko coating in the air frier. They turned out good, nice and crisp on the outside.
