We had company for lunch today. Neighbors a few houses up the block. We enjoyed BBQ Chicken, Zucchini Salad, Fruit Salad, and Iced Tea. Also very pleasant company.
Then, what to do about dinner? I’ve been thinking about BLT sandwiches lately.
When I was between the ages of 12 and 14 I lived in Olympia, WA. Downtown there was a store that had a lunch counter. I don’t remember the name of the store. But they had the best Bacon, Lettuce, Tomato sandwiches I have ever eaten.
I never had much money so they could not have cost more than a dollar, maybe a buck fifty. Anyway it was a special treat that I enjoyed once in a while during the time I was living there with my Grandparents after both of my own parents had passed away.
Today I was able to pick up a pound of bacon at Trader Joe’s that was really excellent. Toasted Dave’s Killer Bread, fresh leaf lettuce and tomatoes, and mayo. Yum. They were a hit! Apollo hummed when he took a bite.
